Reflections from Renee: Rocky

Reflections from Renee: Rocky

Rocky

Alice asked me at work if I would like a cute puppy...NO...shaking my head.
She brought this little puppy to work one day and asked again...did I want him? Did anyone want him?
I could not resist those eyes and eyebrows. Matthew instantly liked him and made him feel at home. He made his way into our home without any insecurities. He has been through a lot with his family. Bad weather...other dogs brought in to live with him. The last a move from the farm to a different countryside but he took it all in strive. I think it was 1994 when we got Rocky.
So he is holding his age quite well. Different haircuts throughout the years. Getting a little older and gray...as with all of us. When I think of him he makes me think of happiness and always being ok with everything, even if everything is not perfect. He makes me think of excitement over the most mundane happenings....yeahhh a walk and run in the backyard!
He makes me think of sticking with it, even though I want to quit sometimes. Always those fun, loving eyes staring at you. Thanks...Rocky.

Cooking Class

I just love Amy's Pizzas! I always add a few toppings to make this a little bit more substantial and tasty. To this one I added olives and chopped tomatoes with extra cheese. These two like my cooking class. Alice likes to multi task while sunning herself and Rosie is just hoping for a few bites of anything.

Polenta vs Mush

I bought some garlic and dried tomato polenta the other day at Whole Foods Market. Just wondering why they call it polenta now instead of mush. Back in the 80s we called it mush and was so good fried. Of course back then we didn't use olive oil..hate to say what we used for oil but now we do it the healthy way.

There are so many ways to fix polenta. Above is a wonderful way to fix polenta with mozzarelle..(;) and smashed up tomato with rosemary. I was thinking of fried green tomatoes but can't fry everything! Toast it all up and wha-la..perfection. Eggplant would also be perfect to add on top or maybe an avocado whipped up with a dollap on top. You could then add a spoonful of sour cream on top...(ok Renee shut it down). Anyhow I am glad that mush has a new name and it is back on our plates! BON APPETIT!
